Tasty Tuesday - Sweet Pork Salad

A couple of Sundays ago we made Sweet Pork Salad, a copy cat recipe for Cafe Rio or Costa Vida pork salad I found on the Internet. It turned out so good. We couldn't decide if we liked it better. It really did taste just like the ones you get at the restaurant.


Sweet Pork

Ingredients:

1 (3-5 lb.) sirloin or boneless pork loin roast

1 cup medium or hot salsa

1 cup packed brown sugar

some coke


Method:

Place ingredients in slow cooker. Cover and cook on low heat for 8-10 hours. Shred pork before serving.




Cilantro-Lime Rice


Ingredients:

1 cup uncooked converted white rice (we used brown)

1 teaspoon butter

2 cloves garlic, minced

1 teaspoon grated lime peel (zest)

1 can chicken broth

1/4 cup water

2 Tablespoons freshly squeezed lime juice

2 teaspoons sugar
3 Tablespoons freshly chopped cilantro


Method:
In a saucepan combine rice, butter, garlic, lime zest, chicken broth and water Bring to a boil. Cover and cook 15-20 minutes, or until rice is tender. Remove from heat. In a small bowl, combine lime juice, sugar, and cilantro. Pour over hot cooked rice. Serve warm.


Creamy Tomatillo Salad Dressing


Ingredients:


1 envelope Ranch Salad dressing
6 tomatillos, (we used canned)

1 clove garlic, minced

Juice from 2 freshly squeezed limes

1/4 cup freshly chopped cilantro


Method:


Make Ranch salad dressing as instructed. Combine all ingredients in a blender. Blend until smooth. Pour over pork and rice in a salad.

No more monkeys jumping on the bed.

We finally got Miley out of our bed. I didn't really mind her sleeping with us. She was real wiggly but our bed is big enough it wasn't too bad. We had to move her because we didn't like the fact that all of a sudden she started falling off the bed. She fell off the bed once while she was sleeping and a number of other times while she was playing on the bed. It was really scary. One time she went head first.
We didn't move her far. We didn't even move her back to her crib. (She hates her crib) Why did we even buy one? She moved to the floor by our bed. She sleeps on her crib mattress.
I wasn't sure if she was going to like that. I was afraid we would have to take the frame off our bed and just have our mattress on the floor, but Miley has been doing really good on her "new" bed. Sometimes I wake up and find half her body on the floor and the other half on her mattress. This morning, she was all the way off her mattress and just sleeping on the floor. I thought that was sad so I had Miles move her back on the mattress before he went to work. She even knows that is her new bed (for now anyways). The other day she had her blanket in the living room, I told her to take her blanket back to her bed and she went right to her mattress and dropped it off. I want to get her a Disney Princess toddler bed, but I'll probably have to wait a while, at least until she can stay on the mattress.
